A great book on this topic is Brain Maker by Dr David Perlmutter. After reading that book I started making my own probiotic yogurt using his recommended strains of probiotic and organic cream.

We always have- every fall we used to chop up all the cabbages from the garden and put them in a huge 20 gallon crock- now I just make small batches for myself in jars
